The Tuscany region of Italy is a special place where art, architecture, traditional farms, wine and some of the worlds best food all come together. When the sun sets on Tuscany, the days work is done and it is time to share a fine wine and some great cheese with friends. Our own Tuscan Sun is a young, moist, slightly acidic Asiago with sun dried tomatoes and basil. Distinctly Italian, with a fresh, herbal, farmhouse twist, this immensely desirable delicacy is one of our signature cheeses. Gouda prego del nostro formaggio fine.

Kentucky is famous for it’s bluegrass farms, calcium rich soil, and mineral laden spring water that builds strong bones for race horses (and cows). Reminiscant of the chalky soil and pastures of France, those rich qualties are passed on through our farm fresh milk to produce cheeses with strong calcium bonds. Our unique Kentucky Derby is a handmade traditional Derby style cheese with a hint of fresh mint and infused with fine Kentucky Bourbon. A very special treat from the Bluegrass state.

Fromage de Moody Bleu (USA)
Often called the 'King of English Cheeses”, Stilton was conceived in the early 1700s in the English village of the same name. A recipe from that time suggests that this was a hard pressed, cooked, cream cheese with no resemblance to what we know as Stilton today. The cheese was sold from The Bell Inn and in the early 1740s the inn’s owner contracted with a renowned cheesemaker to create a very different cheese that became the forerunner of today's Blue Stilton. Production of the cheese ceased in the village during the course of the 18th century and is carried on by only a handful of skilled cheese makers. Our creamery, delicious Fromage de Stilton combines the qualities of both Stilton and the best French blue cheeses. Since our cheeses are all handmade and never processed with machinery, the delicate curds can reach their full potential. Made with blueberries or ginger, the taste is one that you will not soon forget. Our signature specialty, many of our customers say this is the best cheese they have ever eatten.
